Have you ever seen someone cook without a recipe?
… and it is usually someone who know what they are doing. As in a parent (or your grandma)
Turns out you don’t need to perfectly know what you are doing to bend a recipe a little: because you have soups and soups are very forgiving.
Recipes are nice when you are trying to make something new. But sometimes they can be a little intimidating because you don’t want to get anything wrong. Therefore it’s nice to have an outline recipe: something you can follow but don’t have to obey to the tee.
It’s simple, you like sausages? Add more sausages. You don’t fancy mushrooms? Don’t add the mushrooms.
Today I present to you a soup with a 100% success rate, as in has NEVER been known to fail. This is by far my favorite “outline recipe” : Loaded soup
LOADED SOUP
YOU’LL NEED
➢ 4 cups Broth (bone broth is wonderful, but bought broth will work)
➢ 2 cups vegetables of choice
➢ 1/2 an onion diced
➢ 2 tbsp of oil
➢ 1/2 cup to 1 cup cooked meat of choice (I recommend using one on the salty side)
➢2 eggs beaten (optional)
➢ salt, pepper, chili flakes and garlic powder to taste
DIRECTIONS
Think of it like “make your own pizza” soup.
Wash and prep your vegetables of choice and set them aside.
Heat a pot on medium hear, add oil.
Dice the onion and add it into your pot.
When the onion starts to turn clear add your vegetables (I used mushrooms and broccoli)
Add the meat and saute for 2~ minutes
Pour your broth over the ingredients and raise the heat to high.
When your soup starts to boil, you can choose to add your beaten eggs.
*If so swirl them into the hot broth for a pseudo egg drop soup.
Then season with the spices, and enjoy.
